Corn is available all year round, but the best time to buy corn is during the summer. You’ll see them at grocery stores and farmers markets. Thanks to Produce Pete, I know how to buy and cook corn the right way.
Buying Corn
- Look for a husk that’s green, firm and fresh.
- Look at the silk: it should be pale and silky, with only a little brown at the top. The brown silk is mainly discoloration from the sun.
- Do not strip the husk of the corn until you’re ready to cook. Removing the husk puts heat into the corn and causes the corn to build starch.
- Pick up the corn: it should feel cool, not warm
Storing Corn
It is best to eat the corn on the day of purchase. Try not to store corn, but if you must, put it in the refrigerator. This delays the starch-building process; and keeps the natural sugar in the corn. The sugar is what gives the corn its sweetness.
Cooking Corn
Again, only remove the husk when you’re about to cook the corn.
- Boil: boil the water, put the corn in the pot and boil for about 3-4 minutes.
- Microwave: cook for 2 1/2 minutes
- Grill: Pull back the husk, spread some butter and salt. Put the husk back in place and grill for about 15 minutes.
