If you’re pressed for time and don’t want to go through cooking Tortang Talong (Eggplant Omelet), this is a great alternative. The recipe is simple and takes only minutes to prepare and cook.
I put in an extra step and salt my eggplant before cooking. Why? Salting removes excess liquid and some of the bitterness.
Pritong Talong (Pan Fried Eggplant)
Pritong Talong or Pan Fried Eggplant is an easy Filipino dish made out of thinly sliced eggplant seasoned with salt and pepper then pan fried. Serve hot with rice and soy sauce for dipping.
Ingredients
- 2 Japanese eggplants
- 1 egg
- Kosher salt to taste
- freshly ground black pepper to taste
- vegetable oil for frying
Instructions
- Slice the eggplants in 3 portions lengthwise and cut in half cross wise
- Lightly salt on both sides to extract liquid. Let stand for about 10 minutes. Soak up liquid with paper towels.
- In a bowl, whisk egg. Add salt and pepper.
- Heat a non-stick pan then add small amount of oil.
- Dip eggplant into egg mixture, then pan fry for 3 minutes on each side or until golden brown.
- Serve eggplant with soy sauce and rice.
