During a recent trip to the farmers market, I came across Purple Bell Peppers. I’ve never seen a purple pepper before, so after I quick walk-by, I returned back to stand where they were on display. I only bought 2 since I never cooked them before.
Purple bell peppers have a similar taste to the conventional green bell pepper, just a little bland. I tried cooking the purple bell peppers in an omelet with tomatoes and shallots, and they came out fine. The only difference is the color changed to green, as what typically happens when you cook purple peppers.
I recommend using purple bell peppers in a salad, to keep the beautiful purple color.
