Gambas al ajillo, or “Shrimp with Garlic,” is one of the most popular Spanish tapas. Shrimp and garlic are a wonderful combination, and with this recipe each bite will have you wanting more. We serve ours with fresh bread, which is great to soak up the sauce.
Ingredients
- Olive oil
- 1 head of garlic, chopped
- 1 cup of Sherry
- 3 lbs of large shrimp, peeled and deveined
- salt and pepper, to taste
- Finely chopped parsley
Directions
- Heat olive oil in a large pan over medium-high flame
- Add the garlic and sautee for about 2 minutes. If you overcook it, it will taste bitter
- Pour sherry into the pan and simmer for 2 minutes
- Add shrimp and cook until pink and cooked through
- Garnish with parsley. Serve immediately
