Garlic shrimp is an easy dish to prepare. Pair it with a quick side, like a bean salad, and you’ve got yourself a satisfying meal that takes about 30 minutes to prepare.
Garlic Shrimp
Ingredients
- 1/2 cup extra virgin olive oil
- 1 lb large shrimp, peeled and deveined
- 1/2 bulb of garlic minced
- salt and pepper, to taste
Directions
- Season shrimp with salt and pepper.
- I recommend working in small batches. Heat 1/3 of the oil in a large skillet over low heat. Add all the garlic and cook for 5 minutes. Stir, and make sure the garlic does not burn.
- Cook 1/3 of the shrimp, arranged in a single layer until they start to turn pink, about 2 minutes.
- Continue cooking until garlic turns light golden brown and shrimp become opaque, about 1 minute more.
- Transfer shrimp to serving plate.
- Repeat for the next two batches.
Bean Salad
Bean salad is an easy dish to prepare, and doesn’t require cooking. Another good thing is it tastes better the next day because the flavors marry.
- 1 can (15.5 oz.) Black Beans, drained
- 1 can (15.5 oz.) Chick Peas, drained
- 1 can (15.5 oz) Sweet Corn, drained
- 1 medium red onion, finely chopped
- 5 tbsp chopped fresh cilantro
- 5 cloves garlic, minced
- 1 jalapeño
- Juice of 1 lime (or lemon)
- salt and pepper, to taste
Directions
Combine all ingredients in a bowl. Season well with salt and pepper.
Tip: If you want to add heat to the dish, keep the veins and seeds of the jalapeño. That’s where the heat comes from.
Putting it all together
Serve the garlic shrimp with the bean salad, or add a side of white rice. Garnish with cilantro.
