It’s been a while since I had a Belgian wafel. The last time was when I was in Brussels earlier this year – it was made fresh off the hot press and topped with Nutella and White Chocolate.
Thankfully, you don’t have to board a plane to get a great Belgian wafel. Just follow the whereabouts of Wafels & Dinges, a Belgian wafel truck/cart vendor founded by Thomas DeGeest. Just recently, they popped up in the Flatiron District, with a cart parked on 23rd and 5th, and now at Mad. Sq. Eats on 25th and Broadway until October 21st.
Instead of getting my favorite combination – Nutella and Bananas, my wafel maker convinced me to get the daily special: Granny’s Envy Wafel, $7, made with Spéculoos Cookie Spread, Fresh-cut Palared Apple, and topped with Wildflower Honey. A divine combination. What got me to order this? The spéculoos – which I first tried in a Belgian cheesecake prepared by Les Tartes de Francoise, a Belgian bakery in Hell’s Kitchen.
Spéculoos (or spekuloos) is a Belgian shortbread cookie. You can find them in cookie form, or in a creamy spread. At Wafels & Dinges, the spread tastes like a gingerbread cookie, and I love gingerbread cookies.
Wafels & Dinges also sells other wafel creations, and you can also tell them how you’d like your wafel prepared, just by selecting the dinges, or toppings you want, like strawberries, Belgian chocolate fudge, and whipped cream. Here’s the complete menu.
