I had some leftover pork chops from the night before. What a shame…fried chops don’t taste as good as they do when they’re freshly cooked. What to do? I decided to improvise. Thinking of the ‘Double Cooked Roast Pork’ dish at Chinese restaurants, I decided to cook this for dinner:
Recipe: Double Cooked Pork Chops with Snow Peas
1 teaspoon finely chopped ginger
1 tbsp vegetable oil
1 scallion (sliced – separate the white ends)
2 pork chops – thinly sliced without the bone
2 handfuls of snow peas
1 tbsp sesame oil
1 teaspoon sesame seeds
In a wok, heat vegetable oil over high heat. Add the ginger. Cook for about 2 minutes. Add the white ends of the scallion. Add sliced pork chops and cook for 3 minutes. Add snow peas and sesame oil. Cook for another 2 minutes. Add the sesame seeds and green ends of the scallion. Stir it up and serve, preferably over white rice.
