Chicken Afritada
Chicken Afritada – or Afritadang ManokEver heard of this Filipino dish? It is a chicken stew cooked in tomato sauce. In it are sliced bell peppers, carrots, peas, and potatoes. Served over rice, you can’t just have one bowl of it.
Ingredients
- 4 chicken legs skin removed and cut into chunks
- 2 potatoes cubed
- 2 carrots chopped
- 1/2 cup fresh peas (can substitute with frozen peas)
- 1 8 oz. can tomato sauce (I use Goya)
- 1 cup water
- 2 tbsp vegetable oil
- 4 cloves of garlic peeled and chopped
- 1 small yellow onion chopped
- 3 bay leaves
- salt and pepper to taste
- 1 tsp black peppercorns
- 1 splash of white vinegar
- 1 tsp dried oregano
Instructions
- Heat vegetable oil on medium heat in a caldera, or large pot. Add the chicken and cook until brown – about 6 minutes.
- Add garlic, onions, tomato sauce, bay leaves, water, vinegar, oregano, and peppercorns. Stir and simmer for about 30 minutes.
- Add potatoes and carrots. Cook until tender.
- Season with salt and pepper.
- Add peas and bell peppers. Cook another 2 minutes.
- Serve over rice.
