This recipe is one of my go-to’s for a quick, comforting meal, especially on a chilly day. It can be cooked within 30 minutes. I usually use pre-cooked sausage to cut down cooking time, but fresh sausage can be used as well. If using fresh sausage, discard extra oil that accumulates in the pot.
Ingredients
- 1 small onion, chopped
- 3 garlic cloves, chopped
- 3 bay leaves
- 2 tablespoons extra-virgin olive oil
- 1 head of kale, stems and center ribs cut out and discarded, then leaves torn by hand
- 4 cups chicken bone broth
- 1 cups water
- 1 (14-oz) can chickpeas, rinsed and drained
- 1 12-oz package of pre-cooked mild Italian chicken sausage
- salt and black pepper, to taste
Instructions
- Heat the olive oil in a large wide pot over medium-high heat.
- Add the sausage and cook until brown all over, 8 minutes.
- Transfer sausage to a cutting board and leave the oil in the pot. Slice into 1-2 inch slices.
- Reduce heat to medium-low, add garlic and onions, and cook for 30 seconds.
- Add the sliced sausage, chickpeas, bone broth, kale, bay leaves, and water to the pot. Increase heat to medium-high, and cook until hot, about 10 minutes.
- Season with salt and pepper to taste.
- Serve hot.
