This is such an easy recipe, which can be done in less than 30 minutes.
Ingredients
- 1/3 cup extra-virgin olive oil
- 8 garlic cloves, chopped
- 1/4 tsp. red pepper flakes
- 1 bunch broccoli rabe, about 1 1/2 lb., trimmed and roughly chopped
- 1 lb. sweet Italian sausage, casings removed and meat crumbled
- 1 lb. orecchiette
- Salt, to taste
- 1 cup grated pecorino cheese
Directions
Bring a large pot of water to a boil over high heat. Add the salt and broccoli rabe to the boiling water. Cover and cook for 4 minutes. Using a skimmer or slotted spoon, transfer the broccoli rabe to a bowl and set aside. Return the water to a boil.
Add the pasta to the boiling water and cook al dente according to package directions.
Meanwhile, in a large fry pan over medium heat, warm the oil. Add the sausage and sauté, stirring occasionally, until browned, about 4 minutes. Add the garlic and red pepper flakes and sauté for about 2 minutes. Add the broccoli rabe and stir to combine.
Add the pasta to the sauce and stir to coat. Add as much of the reserved cooking water as needed to loosen the sauce and serve with grated pecorino cheese. Serves 4-6.
NOTE: I like mine extra spicy, so I’ll make a separate batch. In a small sauté pan, heat olive oil and add red pepper flakes to your liking. Then add a portion of the pasta and sausage mixture. Toss to combine and serve.
