Back in February, CTbites ran a contest to “Design Pizzeria Rosso’s 2012 Pie.” My entry was based purely on a craving I had at that moment:
Osso bucco pizza: A thin layer of mashed potatoes, topped with caramelized onions and pieces tender osso bucco
Maybe you could call it R’osso bucco
I later found out my entry was a finalist, with a slight modification:
A thin layer of mashed potato (thinly sliced were used) topped with caramelized onions and pieces of tender Osso Bucco.
We joined the CTbites team for a taste test on judgement night (no, we didn’t get a chance to vote). Here are photos of our creation.

And the improvised pizza by Owner and Chef Pat Pascarella, a modification of the Osso Bucco pizza with three eggs on top:

For dessert, we had a pizza with a thin layer of fig jam, brie, arugula with a drizzle of honey, created by CTbites’ reader Lynn. The pizza was gorgeous, and was delicious.

At the end of the evening, Chef Pat decided that all of the finalist pies will be included on the Greenwich menu. The improv pizza was dubbed the CTbites 2012 Pie Combo: Shredded short ribs, juice from the braise, tomato gravy, thinly sliced potatoes and eggs
So when will this pie be ready for consumption?
Chef Pat told me the Greenwich location, Cortina Pizzeria, will open in June. So expect to try these new creations then. I can’t wait!
