Ingredients
- 1 small onion, sliced
- 1/2 green pepper, sliced into strips
- 2 tbsp butter
- 2 tbsp beef broth
- 8-10 slices of roast beef
- 2-3 slices of cheddar cheese
- salt and pepper, to taste
- garlic powder, to taste
- 1 baguette, sliced in half – with a horizontal slice
Directions
1. Melt butter in a non-stick skillet over medium-high heat
2. Add onions and cook for about 10 minutes, stirring often
3. Add green peppers to the pan and cook for 5 minutes
4. Add the beef broth – this adds flavor to the onions
5. When half of the broth evaporates, lay the slices of roast beef on top of the onions.
6. Place the slices of cheese on top of the beef. Season with salt, pepper, and garlic powder.
7. While the cheese is melting, be sure to stir the onions around so it doesn’t burn and stick to the bottom of the pan
8. Finally when the cheese is melted, use tongs to pick up the meat and cheese and rest it in the baguette. Add the onions and serve.
Want more crisp? Put the beef and cheese on one side of the bread and broil for 2 minutes until cheese is bubbly and melted.
