| Candice Kumai mixing ingredients for Fuji Apple Crab Cakes |
Today, I had a chance to meet the wonderful Candice Kumai (Twitter handle @StilettoChef), Top Chef alum and author of Pretty Delicious: Lean and Lovely Recipes for a Healthy, Happy New You at a demo and book-signing at bloomingdales.
She cooked her own Fresh Fuji Crab Cakes, which was absolutely delicious, and unlike the usual crab cakes you get at restaurants, they were not oily and heavy.
The crab cakes consisted of simple, inexpensive ingredients:
- lump crabmeat
- Fuji apple
- mayonnaise
- red pepper
- onion
- panko bread crumbs
- and other simple ingredients
I won’t disclose the recipe, but you can read it in her cookbook on page 138.
From start to finish, it took about 10 minutes to get half a dozen mini crab cakes on a platter.
Candice served the crab cakes on sea shells, added a dollop of yogurt and garnished with cilantro and sliced apples. I always thought crab cakes was more time consuming to cook, but she made it in a snap. Now, I think I know what I’ll be cooking this weekend.
I flipped through the cookbook and was impressed with the photography and the recipes. And, of course, I purchased it and had Candice sign it for me. I was surprised to hear her mention my name, “Are you Denise!?”
Ah, the power of Twitter, and how you can communicate with people you know, and people you have never met. So we engaged in a little chit chat. No need to disclose the conversation, but she is down-to-earth and such a pleasant person to talk to.
