Kunjip Restaurant in Koreatown, NYC serves the best Budae Jjigae – kim chi stew with glass noodles, tofu, hot dogs, SPAM, rice cakes, and slices of pork.

I don’t go to Koreatown often, so I decided to try to make this dish at home. I call this recipe the simple version because I do not make my own broth, or use fresh noodles. Instead, I rely on a packet (or two) of Nong Shim Shin Ramyun, jarred kim chi, SPAM, scallions, and whatever else I want to throw into the pot.
Ingredients
2 packages of Shin Ramyun
7 cups of water
1/2 cup kim chi
1 cup of diced SPAM
1 scallion, chopped
Directions
1. In a saute pan, pan fry the diced SPAM for about 3-4 minutes until crispy on the outside.
2. In another pot, boil 6 cups of water. Add soup base and vegetable mix.
3. Add diced SPAM and cook for about 2 minutes
4. Add the noodles. Continue to boil for about 5 minutes.
5. Add kimchi and cook for another minute.
6. Serve in a bowl, and top with the chopped scallions
