Recipe: Hawaii Chocolate Haupia Pie

This morning I was craving Chocolate Haupia Pie, a yummy treat I had when I was in Hawaii. I’ve only had one so far, and it was from Ted’s Bakery on the North Shore of Oahu.

I found a nice article and recipe online on Hawaii Magazine’s website. Here’s my mainland recipe. Since I was unable to find one of the original ingredients: coconut extract, I used vanilla extract instead.

Chocolate Haupia Pie

Directions

  1. In a medium saucepan over medium-low heat, whisk together milk, coconut milk, vanilla extract and 1 cup sugar.
  2. In a separate bowl, dissolve the cornstarch in water.
  3. When the coconut milk mixture begins to boil, reduce the heat to low and simmer and slowly whisk in the cornstarch mixture. Continue stirring over low heat until thickened—about three minutes. Divide evenly into two bowls.
  4. Melt chocolate using a double boiler, or as an alternative, boil water in a pot, place chocolate bits into a Pyrex bowl, or similar bowl, and place atop boiling water.
  5. Mix chocolate into one of the bowls of coconut pudding, then pour mixture into the pie crust, spread and let sit.
  6. Pour the remaining bowl of coconut pudding on top of the chocolate-coconut pudding mixture and spread smooth being careful not to mix the two layers. Refrigerate the pie for an hour or more.
  7. Prepare the whipped cream by rigorously whisking the heavy cream and sugar for about 3 minutes.
  8. Layer the whipped cream on top of the pie, and sprinkle with shaved chocolate.

NOTE: You can substitute the vanilla extract with coconut extract per the original recipe from Hawaii magazine. Doing so will add more ‘coconut’ flavor to the pie filling. I feel using vanilla gives the pie more richness and tones down the coconut milk.


Recipe: Pie Dough

Ingredients:

Haupia pie without the whipped cream.
A little messy because we didn’t allow enough time
for the filling to chill

Directions: 
(Note: I like to make pie dough by hand)

  1. In a large bowl, stir together the flour, sugar and salt.
  2. Using 2 knives, cut the butter into the flour mixture until the texture resembles coarse cornmeal, with butter pieces no larger than small peas.
  3. Add the water and mix with a fork just until the dough pulls together
  4. Transfer the dough to a lightly floured work surface, pat into a ball and flatten into a disk.
  5. Lift the dough and give it a quarter turn. Lightly dust the top of the dough or the rolling pin with flour as needed, then roll out into a round at least 12 inches in diameter and about 1/8 inch thick.
  6. Place dough onto a 9-inch pie dish. Bake for about 15 minutes at 350 degrees. Let cool before making the pie.
