Recipe: Mini SPAM® Quiche

Did you know my recipe for Mini SPAM® Quiche was recently published in The Ultimate SPAM® Cookbook which hit stores in August? Filled with lots of great recipes (including some from noteworthy chefs), I’m honored to be included in Hormel’s official cookbook.

Growing up in a Filipino household, SPAM® was a staple. Now I’ve given it my own twist and put it into a dish that you would least expect would have SPAM® in it.

These Mini SPAM® Quiches are easy to make and so delicious! Phyllo shells can be found in the freezer aisle of your grocery store. These mini quiches are perfect to serve as an appetizer or with a salad for Sunday brunch. Alternatively, you can skip the phyllo shells and make Mini SPAM® Frittatas.

Mini SPAM Quiche

Ingredients

Directions

  1. Preheat oven to 350 degrees F.
  2. Line a baking sheet with parchment paper and place thawed mini phyllo shells on it.
  3. Heat olive oil in a pan over medium heat.
  4. Add white parts of the scallion and sauté until translucent, about 2-3 minutes.
  5. Add diced SPAM® to the pan and cook for 5 minutes, stirring occasionally.
  6. Transfer to a paper towel-lined plate.
  7. Spoon evenly into phyllo dough shells. Top with shredded cheddar cheese and scallion greens.
  8. In a mixing bowl, whisk together eggs and milk. Season with salt and pepper. 
  9. Fill each shell with egg mixture.
  10. Bake for 15 minutes until the eggs are puffy.
  11. Remove from the oven. Serve.

Mini SPAM Frittata Option

Skip the mini phyllo shells and use a muffin pan to make Mini SPAM® Frittatas.

Spray the muffin pan with nonstick spray. Divide the SPAM® and cheese evenly among the muffin cups. Pour the egg and milk mixture over the filling in each cup as evenly as possible. Cups should be about ⅔ full. Place in a preheated oven. Bake for 15 to 20 minutes until the frittatas have risen and are golden on top.
