Whenever we go apple picking, I look at the bags of apples on my counter and think about what I’m going to do with them. My go-to’s are Dutch Apple Pancakes, Apple Pocket Pies, and Apple Crumbles/Crisps.
Dutch Apple Pancakes are easy to make and can impress your guests once plated and dusted with a touch of confectioners sugar.
Ingredients
- 1 Apple (I typically use Honeycrisp or Gala apples)
- 1 tbsp butter
- 2 tbsp granulated brown sugar
- 1/2 tsp cinnamon
- 3 eggs
- 3/4 cup flour
- 3/4 cup milk
- Zest of 1 lemon
- Confectioners sugar, for “garnish”
Directions
- In a small pot, melt butter and sauté apples with sugar and cinnamon
- In a bowl, whisk eggs, flour, and lemon zest
- Pour batter into a pan (with non-stick spray) and assemble apples on top
- Bake at 400 for 15 minutes
- Dust with confectioners sugar and enjoy immediately
Side note: I also used Bob’s Red Mill gluten-free flour in this recipe and it came out great!
