It’s apple season. And if you’ve gone apple picking, you’ve probably got a lot of apples on your counter. Besides baking with them, what should you do with all those apples? Make a salad. Here’s an easy recipe using 2 apples. I prefer Honeycrisp or Gala because they’re juicy. Some like it tart and go with Granny Smith. Your call.
Apple, Manchego and Marcona Almond Salad
Ingredients
Vinaigrette:
- 2 tablespoons white wine vinegar
- 1 teaspoon honey
- 2 tablespoons extra-virgin olive oil
- Sea salt
Salad:
- 2 Honeycrisp or Gala apples, thinly sliced about 1/8-inch thin
- 1 ounce Manchego cheese, sliced
- 2 tablespoons Marcona almonds
- 1 cup of frisée
Directions
Vinaigrette: In a medium bowl, whisk the vinegar and honey to blend. While whisking, slowly add olive oil in a thin stream to blend completely. Season the vinaigrette to taste with salt.
Salad: In a medium bowl, combine apples, cheese, Marcona almonds, and frisée. Pour dressing when ready to serve. Toss and plate.
