We discovered Adoboloco five years ago back when they had just a couple flavors – the original Adoboloco Jalapeño and Bhut Jolokia (Ghost Pepper). My fridge and pantry have been stocked with their sauces since then. Over the years they’ve introduced different hot sauces, ranging from mild to hot, including Bangkok sauce (medium), Pineapple (hot), Habañero (hot), and a very hot Hamajang, smoked Ghost Pepper sauce. Recently they’ve launch a hot sauce called Mangoes! Bumbye!, a perfect blend of sweet mangoes and a little heat from Habanero peppers. I just had a frittata and poured a bunch of it on top. So delicious.
It’s been years since I last chatted with Adoboloco founder Tim Parsons, so I decided to see what he’s been up to on the beautiful island of Maui.
Adoboloco and Andaz Maui Resort have collaborated on a new hot sauce which came out last month – Mangoes! Bumbye! It’s currently sold out. Will you be making more batches soon? I’m trying not to use mine up so quickly.
Yes we’re actually just finishing up a new batch now. It should be ready the week of 4/25.
Speaking of collaborations. The label of Mangoes! Bumbye! says Collaboration Series. What’s next?
We’re not sure yet. This collaboration took almost a year from concept, recipe development, testing and and approval for production. We’ll leave the door open to other opportunities and ideas 🙂
What other creations are you working on? I’m thinking an Adoboloco grilling sauce would be ono!
We actually have a long list of products to develop. Our most recent new one is our “Jalapeño Chico.” They’ll be available at all Williams Sonoma stores in a few weeks with the new spring launch.
We also have a new product coming out that we’ll be launching via Kickstarter very soon. All we have left on that is to do the video and then launch our project.
I was pleasantly surprised to see Adoboloco while shopping at Williams Sonoma in NJ. Are there plans to spread to more stores on the mainland?
Yes we’re working on trying to get our products distributed across the lower 48 now. That is way we started production in Portland Oregon. This way we don’t have to ship as much of what we make from Hawaii to the mainland. The freight coming across the ocean was getting to costly for customers here on the Mainland.
