Trying to think of what to do with the leftover Thanksgiving turkey? Yeah, you can make a sandwich, salad, stir fry, chili. I decided to make use of the turkey bone and unwanted dark meat on the back of the turkey to make a hearty soup.
Ingredients
- 3 celery stalks, sliced
- 1 carrot, sliced
- 1 cup of turkey meat chopped
- turkey bones, I used the spine and leg bones
- 1 cup of chicken stock
- 1 cup of water
- 3 sprigs of thyme
- salt and pepper, to taste
Directions
- Cut the back side of the turkey. I used the back and leg meat for my recipe.
- Over medium heat, add the bones and heat for about 3 minutes. Hopefully, if there’s still fat and butter saturated in it, the bones will cook in it.
- Add the carrots and celery. Stir and cook for about 2 minutes, stirring often.
- Add the chicken stock, water, and thyme sprigs. Cook until the soup begins to boil.
- Add the turkey meat, and cook for another 5 minutes. Serve immediately.
