Ingredients
4 tbsp olive oil
4 garlic cloves, chopped
2 shallots, sliced
3 lbs fresh mussels in shells, beards removed
1½ cup dry white wine
1½ cup heavy cream
4 tbsp chopped fresh parsley
salt and freshly ground black pepper

Directions
1. Heat the olive oil in a lidded saucepan over a medium heat. Add the garlic and shallots and sauté for two minutes, until softened.
2. Add the mussels and white wine, stir well and place the lid on. Allow the mussels to steam for 3-4 minutes.
3. Add the heavy cream and fresh parsley, stir together and season, to taste, with salt and freshly ground black pepper.
4. Serve immediately, pairing w/ pasta, bread, or frites.
