I was delighted to find some fresh Fava beans and had to buy some. Inspired by the dish prepared at Renata’s Hearth in Phoenix, AZ, I decided to recreate their recipe at home. While this dish took about 30 minutes to prepare, it was so worth it.
First I split up some fresh maitake mushrooms and dressed with oil olive. I roasted the mushrooms for about 30 minutes.
I shelled the Fava beans and blanched them. I peeled the beans and added them to a saute pan that I was heating butter, garlic and thinly sliced Serrano peppers in. After cooking for a few minutes I added the roasted mushrooms and tossed in some sea salt.
