A charcuterie board is my go-to for entertaining. Charcuterie boards are visually stunning and can also serve as a centerpiece. Making a keto charcuterie board is easy. Don’t let the word keto discourage you. Basically you’re cutting out the carbs, or making it low-carb.
When I make a charcuterie board , I use a variety of fruits, nuts, olives, cornichons, sliced bread, crackers, meats and cheeses. Really, I use what I can get my hands on.
For a keto charcuterie board, you need:
- Meat – you can go with deli sliced meats like mortadella or Prosciutto, or cured meats/sausages
- Cheese – a combination of hard and soft cheese
- Olives
- Fruits that are low in sugar, e.g. berries
- Vegetables – watermelon radish, cucumbers, artichokes, or broccoli florets
- Nuts – my go-to are Marcona Almonds
How to Assemble the Charcuterie Board
First find a big platter. Depending on how many people you’re serving you can go with a wooden serving board or a large plate.
To assemble the board, I place the meats in different corners and work my way in, filling vacant spots with cheese and other foods. The end product is a beautiful board ready for consumption.
The above board has a variety of sliced salami and a ‘nduja spicy prosciutto spread. Then I placed raspberries on different sides of the board, and filled in the spaces with aged Cheddar cheese, Blue cheese, and a hard goat cheese. Lastly, I added some cornichons, semi-ripe olives, peppadews, and other vegetables around the board.
While I don’t follow the keto diet, I just learned that grapes are not on the keto list, so pretend you didn’t see those in my photos.
