We recently attended Harding’s latest mixology class, where their Head Mixologist, Derrick Turner, taught us how to make three cocktails using Champagne (or sparkling wine) in an hour. All three drinks are perfect to serve at holiday parties.
Key ingredients/notes:
- Spirits are measured and poured in seconds. Every 2 seconds is equal to .5 ounces. Six seconds equals 1.5 ounces and eight seconds equals 2 ounces. According to Derrick, by law bartenders must pour 6 or 8 seconds. If they pour less, call ’em out!
- Simple syrup is a 1:1 ratio of sugar and water. Bring the sugar and water a boil in a small saucepan set over high heat. Remove from heat and cool. Pour into a jar or bottle and store in the fridge for up to a month.

Countdown
- 1 oz St Plantation Rum
- 1⁄2 oz Pama Pomegranate Liqueur
- 1⁄2 oz Simple Syrup
- Top with Sparkling Rose Rim Glass with Sugar
Apple Pie Rye
- 3⁄4 oz Spiced Apple Cider
- 1 1⁄2 oz Old Overhault Rye
- 1⁄4 oz Maple Syrup
- Top with Sparkling Brut
- Dash of Angostura
- Garnish with Orange and Lemon Peel
The Poinsettia
- 1⁄2 Sprig Rosemary
- Handful of Fresh Raspberry
- Muddle berries on Top of Rosemary
- 1⁄2 oz Simple Syrup
- 2 oz Bourbon
- Pinch of Cinnamon
- 5 Dashes of Orange Bitters
- Top with Brut
- Serve Up and Garnish with Fresh Mint
