Baked empanadas are a delicious snack, and they’re also a great appetizer to serve at parties. Also, it’s a better alternative to fried empanadas. This recipe is from my aunt who we feature in our video as she makes an empanada in 30 seconds in the video below.
Ingredients
Filling
- 2 tbsp oil
- 1 tsp chopped garlic
- 1/4 cup chopped onion
- 1/2 pound ground pork
- 2 tbsp butter
- 1 cup chicken broth, or water
- 2 tsp sugar
- 1/4 tsp pepper
- 1/2 pound potato, diced (about 7 small potatoes)
- 1/3 cup raisin
- 1/3 cup grated or shredded cheese
- 2 tsp salt
Dough
- 5 cups flour
- 1 cup shortening
- 1/2 cup sugar
- 1 1/2 tsp salt
- 1 cup water
Directions
- To prepare the filling, heat olive oil in a pot over medium high heat. Add garlic and onions and cook for about 5 minutes. Add ground pork and cook until no longer pink. Add butter, chicken broth, raisin, potato and cheese and cook for 5 minutes. Season with salt. When done cooking, set aside to cool.
- Next prepare the dough. In a food processor, mix together flour and shortening.
- Dissolve sugar and salt in water and add gradually to the flour shortening mixture.
- Press dough together until it forms a ball. Allow dough to rest for at least 30 minutes before using.
- Cut into small portions.
- Roll out each portion into a circle.
- Fill with cooled filling.
- Crimp edges to seal.
- Brush top with milk or eggwash.
- Bake at 350 degrees F for 30 minutes or until golden brown.
