NYC: Hill Country

One of my favorite places to get Texan BBQ is Hill Country, located on 26th Street in the Chelsea area of NYC. Hill Country is a laid back restaurant where meats are smoked over Texas post oak. The selection includes brisket (lean and moist), sausage, and ribs.

Their menu says:

Hill Country is a “barbecue market” inspired by the grand, century-old meat markets in Central Texas that have become legendary barbecue joints.

Our barbecue is dry-rubbed (no sauce) and smoked low and slow with post oak wood shipped specially to us from Texas. Meats are hand carved by our Pitmasters and can be ordered by the slice, by the rib, or by the link.

How to order
Meat is sold by weight. My favorite meat item to order is the lean brisket which sells for $19.75/lb. The lean brisket has just a touch of fat and lots of flavor. For 1 person, I’d suggest ordering 1/4 lb. That’ll be enough to go with the white bread served on the side.

My favorite side items are the Longhorn Cheddar Mac & Cheese and the Collard Greens. The Good Eatin’ size (8 oz.) will suffice for a hungry eater. I usually get one side item during lunch, but dinner calls for some piggin’ out, so I get 2.
