Whenever we’re in Hawaii, I often order Seared Ahi with Wasabi Cream Sauce at my favorite fish markets like Koloa Fish Market or catering spot called Mark’s Place in Kauai. I’ve also had Sesame Crusted Ahi which is also excellent. For this recipe, I’ve did a little of both and prepared Sesame Crusted Ahi Tuna with Wasabi Cream Sauce. Texture comes from the toasted sesame seeds, and the heat comes from the wasabi. This dish tastes great over rice (white or brown) or with mixed greens.
Sesame Crusted Ahi Tuna
Ingredients
- 1⁄4 cup black sesame seeds
- 1⁄2 cup white sesame seeds
- 4 ahi tuna steaks, each about 6 oz. and 1 inch thick
- Salt and pepper, to taste
- 2 tbsp canola oil
Directions
- In a plate, combine the black and white sesame seeds and stir to mix.
- Rinse tuna steaks and pat dry with a paper towel. Season the tuna with salt and pepper and dredge in the sesame seeds, coating the tuna evenly.
- In a searing pan over high heat, warm the oil until smoking.
- Arrange the tuna in the pan (do not overcrowd) and cook until the white sesame seeds start to turn golden underneath, about 1 minute. Turn the tuna and cook until the white sesame seeds start to turn golden underneath, about 1 minute.
- Transfer the tuna to a cutting board and cut into 1⁄4-inch-thick slices.
- Serve immediately over rice or with mixed greens.
- Optional – Drizzle wasabi cream sauce over the fish, or serve in a small bowl.
Wasabi Cream Sauce
Ingredients
- 1/2 cup sour cream
- 4 tsp wasabi power
- Juice of 1/4 lemon juice
- 1 tsp soy sauce
Directions
In a small bowl, mix together all ingredients. Best when served fresh.
